– Umeboshi vinegar is obtained by filtering the salty vinegar extracted from maturing umeboshi.

– It is used like a normal vinegar, which being salty, allows to finish a salad by adding just a little of this vinegar.

– It can also be used in sauces for vegetables by adding a tablespoon of Tahin, two tablespoons of umeboshi vinegar and mixing well.
